Shuls have a rhythm we know well
The sponsored kiddush, the board meeting that runs long, the Shabbos morning where attendance doubles without warning. We cater across the shuls of the Five Towns and the surrounding communities, and much of that work is repeat business with the same gabbaim year after year.
The practical things matter more than the flourishes here. Food that sits well on a table for two hours. Quantities that account for the crowd that actually shows up rather than the crowd that RSVP'd. Setups a volunteer can manage without a briefing.
